Green Gram (Cherupayar) Burfi
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 2 servings
- 1 cup Green gram dhal Cherupayar parippu
- 1 cup Sugar
- 2 cup Thick coconut milk
- 2 tsp Ghee
- 2 tbsp Cashew nuts
- 1 tbsp Raisins
- 10 nos Cherry fruits
Preparation
Step 1
Cook green gram dhal in a pressure cooker adding just enough water(3 whistles will be enough). Drain water & set aside.
Step 2
Add ghee to a frying pan & cook cashews & raisins and set aside.
Step 3
Add cooked gram to the pan & cook for some time keeping on low heat.
Step 4
Add sugar to it.
Step 5
Stir continuously until the sugar melts completely & Stir everything together thoroughly with the gram.
Step 6
Continuously stirring, add coconut milk & Stir everything together thoroughly ad take it off the heat when the mixture is almost going to condense.
Step 7
Remove the mixture into a flat bottomed vessel & decorate with cashews, raisins & cherry fruits and keep it for some time under room temperature.
Step 8
Cut into squares, so that each piece will have one cherry fruit.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
