- 3 tbsp Fennel seeds (Perinjeerakam)
- 2 tbsp Cinnamon sticks (Karugapatta)
- 10 nos Cardamom (Elakka)
- 10 nos Cloves (Grambu)
- 1 tsp Black pepper corns
Preparation
Step 1
Dry roast all ingredients.
Step 2
Powder the mixture and store it in an air-tight jar.
Step 3
This home made masala has a better aroma than the brought-out ones.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
