Fried Squid Rings
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 3 servings
- 200 g Squid — cut into rings with 1/4 inch thickness, koonthal
- 1/2 cup All purpose flour Maida
- 1/2 cup Corn flour
- 1 nos Egg
- 1 tsp Baking powder
- 1 tsp Pepper powder
- Celery salt/common salt, as needed
Preparation
Step 1
Mix together maida, corn flour, egg, baking powder, pepper powder, celery salt and little water to make a paste.
Step 2
The batter consistency should be thick.
Step 3
Dip each squid ring in the batter and fry in hot oil in hot oil till golden in color.
Step 4
Fried squid rings are ready and serve hot.
Step 5
Tips: 1)Do not over fry the squid rings since they tend to become hard.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
