Fried Prawns Masala
Fresh prawn cooked the Kerala way — with coconut, curry leaves, and a tartness that comes from kudampuli or tamarind. Coastal Kerala cooking at its simplest and best.
Ingredientsfor 4 servings
- 1 cup Prawns
- 11/2 tsp Chilly powder
- 1/4 tsp Turmeric powder
- Salt, to taste
- 21/2 cup Onion — cut into small fine pieces
- 2 nos Tomato — cut into small pieces
- 100 g Oil
- 1 piece Ginger
- 1 nos Garlic
- 4 nos Green chilly
Preparation
Step 1
Grind together ginger, garlic and green chilly.
Step 2
Mix together prawns, chilly powder, turmeric powder and salt and set aside for 1/2 an hour.
Step 3
Heat oil and put prawns in it and pan-fry.
Step 4
Get the prawns from oil.
Step 5
Add the ginger-garlic and chilly paste into the pan.
Step 6
Add onion into this and cook it, stirring.
Step 7
When half done, add prawns and close the pan and allow to cook.
Step 8

Tip
Seafood cooks in minutes. The single biggest mistake is overcooking — the moment fish turns opaque or prawns curl and go pink, they are done.
