Fried Brinjal With Coconut
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 50 g Brinjal Vazhuthananga
- 1/2 tsp Chilly powder
- 11/2 tsp Coriander powder
- 5 nos Pepper corns — powdered
- 1/4 tsp Turmeric powder
- 1/2 tsp Garlic — crushed
- 1/2 cup Onion — sliced
- 2 nos Green chillies — slit
- Ginger — chopped
- 3/4 cup Coconut — grated
- Tamarind extract the pulp adding little water
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing fried brinjal with coconut, first grind together chilly powder, coriander powder, turmeric powder, pepper and required salt.
Step 2
Cut the brinjal into thick round pieces and smear the ground masala paste on both sides. Keep the brinjal pieces aside for a few minutes.
Step 3
Meanwhile extract the first and second coconut milk by adding some water and running in a mixer.
Step 4
Pour oil into a pan and heat it and fry the brinjal pieces until golden brown. Remove the brinjal pieces from oil and keep the fried oil aside to settle down.
Step 5
Pour the settled clear oil into another pan and cook onion, garlic, green chillies and ginger.
Step 6
Pour the second extraction of coconut milk and when it boils, add fried brinjal pieces.
Step 7
After a few seconds add the first thick extraction of coconut milk and tamarind. Add required salt and remove the vessel from fire before boiling starts.
Step 8
Fried brinjal with coconut, a Nutritious dish is ready. Serve hot.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
