Fish Tamarind Curry
This homestyle fish curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 2 servings
- Fish, to taste
- 2 tbsp Coconut oil
- 1 tsp Fenugreek seeds (Uluva)
- 1 tsp Mustard seeds
- 2 tsp Ginger sliced lengthwise
- 1 tsp Garlic — chopped
- 1/4 cup Small onion — sliced (Kunjulli)
- 1/2 tsp Turmeric powder
- 1 tsp Coriander powder
- 1 tsp Chilly powder
- 1 nos Tomato finely chopped, small
- Curry leaves A, a few
- 1/4 cup Thick coconut milk
- 1 tsp Thick tamarind water (puli)
- Salt, to taste
Preparation
Step 1
Warm coconut oil in a pan.
Step 2
Allow to crackle fenugreek seeds followed by mustard seeds.
Step 3
Add ginger, garlic and small onion and cook well.
Step 4
Reduce the flame.
Step 5
Add turmeric powder, chilly powder coriander powder and salt and fry it lightly.
Step 6
Add tomato and sauté, till it blends.
Step 7
Add the thick tamarind water and Stir everything together thoroughly.
Step 8
Add curry leaves.
Step 9
Reduce the flame.
Step 10
Add coconut milk and allow it to boil.
Step 11
Add very little water as needed.
Step 12
When the gravy boils, add fish and cook, till done.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
