Fish In Tomato Sauce
Fresh fish cooked the Kerala way — with coconut, curry leaves, and a tartness that comes from kudampuli or tamarind. Coastal Kerala cooking at its simplest and best.
Ingredientsfor 4 servings
- 500 g Fish washed and — drained
- Pepper powder A little
- 1/2 cup Tomato pieces
- 1/2 Dsp Soya bean sauce
- 1/2 cup Onion cut round
- 1/4 cup Onion — finely sliced
- Ginger A small piece
- 3 Cloves Garlic
- 4 nos Dry red chillies seeds removed
- Turmeric powder A pinch
- Sugar A pinch
- 1 Dsp Vinegar
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing fish in tomato sauce, first smear the fish pieces with a paste of pepper powder, turmeric and salt. Set aside for a few minutes.
Step 2
Pour oil into a pan and heat it and fry the marinated fish pieces to a golden brown color.
Step 3
Meanwhile, cook the tomato pieces in 1/2 cup water and extract the puree through a sieve. Set aside.
Step 4
Grind the skins of red chillies, ginger, garlic and turmeric to a fine paste. Keep the masala paste aside.
Step 5
Heat the oil in a frying pan and fry thinly sliced 1/4 cup of onions. When the onions are browned, add the masala paste and onion pieces which are cut round. cook well.
Step 6
Pour vinegar, tomato puree, soya bean sauce, 1/2 cup water and add required salt.
Step 7
Allow the curry to boil and add the fried fish pieces. Season with sugar and remove from fire when the gravy thickens.
Step 8
Fish in tomato sauce is ready. Serve hot.
Tip
Never stir a fish curry with a spoon. Shake the pot gently to coat the pieces — stirring breaks them apart.
