Fish Butter Masala
Fresh fish cooked the Kerala way — with coconut, curry leaves, and a tartness that comes from kudampuli or tamarind. Coastal Kerala cooking at its simplest and best.
Ingredientsfor 4 servings
- 1/2 kg Fish pieces
- 1/2 cup Onions — thinly sliced
- 1 tbsp Ginger paste
- 1 tbsp Garlic paste
- 2 nos Green chillies — sliced
- 1 cup Tomato — chopped
- 2 tsp Chilly powder
- 1/2 tsp Turmeric powder
- 1 tsp Pepper
- 3-4 sprig Curry leaves
- 2 cup Coconut milk
- 1/2 cup Coconut oil
- 2 tbsp Butter
Preparation
Step 1
Grind the masalas(chilly powder, turmeric, pepper, ginger and garlic) and make it into a paste.
Step 2
Mix salt into this paste and apply a small portion of this paste onto the fish pieces. Allow it to marinate.
Step 3
Heat the coconut oil and half fry the fish on both sides and set aside.
Step 4
In the remaining oil, fry the onions, green chillies, curry leaves to a golden color.
Step 5
Add the remaining masala and cook on medium heat until the raw smell of masala disappears.
Step 6
Stir in the tomatoes and cook until pulpy.
Step 7
Stir in the fried fish into the masala and lightly sauté. 8)Now add the coconut milk and Put the lid on and cook for 2 minutes.
Step 8
Lastly add some butter and serve hot with Battura or chappathi or even with hot rice.
Tip
Never stir a fish curry with a spoon. Shake the pot gently to coat the pieces — stirring breaks them apart.
