Emergency Dal Curry
This homestyle dal curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 2 servings
- 1 cup Sambhar dal Sambar parippu
- Salt, to taste
- 1 tsp Chilly powder
- 1 small Garlic pod — mashed
- 6 - Curry leaves
Preparation
Step 1
Pressure cook dal upto 1 whistle.
Step 2
After cooking, do not drain the water.
Step 3
Warm the oil in a pan.
Step 4
Fry garlic and curry leaves, till garlic turns slighly golden.
Step 5
Season with salt and chilly powder.
Step 6
Pour the fried ingredients into the cooked dal and gently stir. Serve hot.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
