Eggs With All Purpose Flour
Eggs cooked the Kerala way — with a rich masala of shallots, tomatoes, and spices. Fast enough for a weeknight, flavourful enough to feel like effort went in.
Ingredientsfor 4 servings
- Egg : 2 nos
- All purpose flour or bread flour : 1 or 2 tsp
- Sugar : 3 tsp
- Water, to taste
- Oil, to taste
Preparation
Step 1
Mix egg with all purpose flour and sugar.
Step 2
Mix it well and make a smooth paste.
Step 3
Heat a pan and add oil in it then pour the batter in to oil.
Step 4
Make the both sides brown and then serve hot.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
