Eggless Mixed Cake
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 6 servings
- All purpose flour : 2 cups
- Soda powder : 1 tsp
- Sugar powder : 1 cup
- Butter : 2 tsp
- Coco powder : 2 tsp
- Vanila essence : 1 tsp
- Hot water : ½ cup
Preparation
Step 1
In large sized bowl, mix all purpose flour, soda powder and vanilla essence.
Step 2
In another bowl, add sugar powder, butter and little hot water. Whisk well till it is combined.
Step 3
Now mix the flour mixture into the sugar mixture. Whisk and combine again.4) Add the water in between slowly and mix again.
Step 4
When it becomes a soft batter, take ¼ part and pour it in small bowl.6) Add the coco powder into it and Stir everything together thoroughly.7) In the baking tray, apply the butter in sides and pour the white cake mixture in one side and on the other side pour the coco mixture.
Step 5
Bake it in oven for 20 minutes.
Step 6
Mouth watering eggless mixed cake is ready.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
