Eggless Fruit Cake
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 3 servings
- Self raising flour – 10 oz
- 1 tsp Mixed spice
- 1 pinch Salt
- 1 tsp Bicarbonate of soda
- Well strained weak tea – ½ pt
- 3 Oz Margarine or cooking fat
- 3 Oz Sugar
- 3 Oz Dried fruit
Preparation
Step 1
Grease and flour a 7" cake tin.
Step 2
Sift the flour, spice, salt and bicarbonate of soda together.
Step 3
Pour the tea into a saucepan, add the margarine or cooking fat, sugar and dried fruit.
Step 4
Heat until the fat and sugar melt and then let it bubble for 2 - 3 minutes.
Step 5
Allow to cool slightly.
Step 6
Pour on to the flour mixture, beat well and spoon into the tin.
Step 7
Bake in the centre of a moderate oven for 11/2 hours.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
