Egg Vada
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 3 servings
- 6 nos Eggs hardboiled and quartered
- 1 cup Allpurpose floour Maida
- 2 cup Wheat flour
- 4 nos Onion sliced thinly
- Ginger A small piece
- 5 – Green chillies
- Curry leaves A, a few
- Salt, to taste
- Chilly powder, to taste
- Cooking oil, to taste
Preparation
Step 1
Crush green chillies, ginger and curry leaves.
Step 2
Mix together the sliced onions, the above crushed mixture, wheat flour, maida, chilly powder and salt with water sufficient to make it into a batter.
Step 3
Dip the egg pieces one by one in the batter.
Step 4
Fry in hot oil them in hot oil, till done. Serve warm.
Tip
Jaggery burns easily. Melt it on low heat and always strain it to remove grit before adding it to the mixture.
