Egg Roast - Spicy
Pan-fried until the edges go dark and crispy, this egg fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- 4 nos Eggs
- 4 tbsp Oil
- 2 nos Onion medium
- 1 tsp Red chilly powder
- 1/4 tsp Black pepper powder
- 1 tbsp Vinegar
- Salt, to taste
Preparation
Step 1
Boil the eggs in water for about half an hour. 2)Heat the oil in a deep bottomed pan. 3)cook the onions until golden brown. 4)Add chilly powder, black pepper powder and salt and cook for another 3 - 4 minutes. 5)Add vinegar and cook for another min. 6)Make some slits on the hard boiled eggs and place them on the sauted onions. 7)Remove from fire. 8)Cover the eggs with the onions. :- Serve hot with chappathi, palappam, uppumav or idiappam.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
