Egg Pola
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 3 servings
- 4 nos Eggs
- 5 tbsp All purpose flour maida
- 3 tbsp Sugar
- 1 Clove Cardamom — powdered (Elakka)
- 1/2 tsp Ghee
Preparation
Step 1
Beat egg, sugar,and cardamom with egg beater or by hand till it gets fluffy.
Step 2
Add maida to this by hand or with a spoon.
Step 3
Heat a pressure cooker, add the ghee and rotate the pan.
Step 4
Add the mixture and close lid(u must taken out after the first whistle).
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
