Egg Pepper Dry Fry
Pan-fried until the edges go dark and crispy, this egg fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- 4 nos Egg
- 1 nos Onion small size
- Pepper powder, to taste
- Salt, to taste
- 1 nos Green chillies — sliced
Preparation
Step 1
Boil the egg.
Step 2
Cut the egg into 8 pices or smaller.
Step 3
Pour oil into a pan and heat it and add finely chopped onions and cook well until it turns golden.
Step 4
Add salt to this which makes it turn brown faster.
Step 5
Sprinkle some pepper powder and fry for 30 seconds.
Step 6
Add the egg into this mixture and fry well.
Step 7
Keep adding pepper on top of the egg so that the egg is lightly covered with egg.

Keep frying.

Do not over do the stir, make sure the egg is not powdered:-).
Step 11
The white of the egg and the yellow will be fried and start turning brown.
Step 12
Serve on a plate.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
