- 2 tsp Green Chillies — chopped
- 1/2 cup Curry leaves and coriander — chopped
- 1/4 cup Onions — chopped
- 2 tsp Oil
- Salt, to taste
Preparation
Step 1
Boil the Eggs, remove the shell of the Eggs, cut them into two pieces (vertically) and keep the pieces aside.
Step 2
Get the Kadala Maavu (Gram Flour) in a Bowl/Vessel and add Red Chilli powder, chopped Garlics, Ginger, Green Chilli, Coriander and Curry leaves and required quantity of Salt into this Kadala Maavu and mix all these ingredients together.
Step 3
Add some water into this mix and make a batter similar to Dosa batter and keep it separately.
Step 4
Heat the oil in a Frying pan/Cheenachatti.
Step 5
Dip the Egg piece in the batter well and put it into the hot Oil.
Step 6
When one side of the Egg(s) is cooked well, turn the Egg(s) to other side and cook that side also properly (generally, it may take about 5 – 8 minutes).
Step 7
When the Egg(s) are cooked properly, take them out from the Oil by using a Spatula and keep them in a plate. Mutta (Egg) Bajji is ready. This Bajji can serve with Sauce/Chutney.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
