Egg In The Hole
Eggs cooked the Kerala way — with a rich masala of shallots, tomatoes, and spices. Fast enough for a weeknight, flavourful enough to feel like effort went in.
Ingredientsfor 1 servings
- Bread: 1 slice
- Egg: 1
- Pepper powder: ½ tsp
- Salt, to taste
Preparation
Step 1
With the help of a cookie cutter or a glass, cut out a slice from the bread.
Step 2
Beat the egg, together with Salt and Pepper.
Step 3
Sprinkle a little of this on the bread.
Step 4
Heat a piece of butter on a frying pan, when it’s warmed up, place your slice of bread and let it toast slightly for 30 seconds.
Step 5
Now, gently ease the beaten egg to the hole. Cook both sides In a low flame for a couple of minutes.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
