Egg Fry
Slow-roasted in coconut oil with a generous hand of spices, this egg fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 2 servings
- 2 nos Egg
- 1/2 tsp Chilly powder
- 2 tsp Coriander powder
- 1 pinch Turmeric powder
- 1/4 tsp Pepper powder
- Garam masala : 1/4 tsp
- 1 Stem Curry leaves
- Salt, to taste
- 3 tbsp Water
- Vegetable oil — for frying
Preparation
Step 1
Boil the eggs and then cut into 2 halves.
Step 2
Make a paste of Chilly powder, Coriander powder, Turmeric powder, pepper powder, salt by using water.
Step 3
Add curry leaves into the paste.
Step 4
Apply a thin layer of paste over the yolk part of the egg.
Step 5
Fry it in vegetable oil. :- Use only low flame to fry.
Step 6
Egg Fry is ready! :- Serve the Egg Fry in hot! :- the Egg Fry!
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
