Egg Dosa
one of the tastiest snack that can be prepared easily when time is short. Protein rich Egg Dosa makes a great breakfast especially for kids. Egg Dosa goes well with chutneys and makes a good filling too. Egg Dosas survive for longer period in lunch boxes.
Ingredientsfor 4 servings
- 1 cup Parboiled rice can be replaced with 1/4 boiled rice and 3/4 white rice
- 1/2 cup Whole Black gram (Uzhunnu)
- 2 tsp Fenugreek seeds (Uluva)
- 3 - Water
- Salt, to taste
- 3 nos Egg
- 1 cup Onion — finely chopped
- 1/4 cup Coriander leaves
- 5 nos Green chillies — finely chopped
- Salt A pinch
- Oil to make dosas
Preparation
Step 1
For Dosa Batter:- 1)Soak rice, whole black gram and fenugreek for 6 hours.
Step 2
Grind it and make a smooth batter.
Step 3
Add salt and keep it for overnight to ferment.
Step 4
Method 1: 1)Beat the eggs and Stir everything together thoroughly with the fermented dosa batter.
Step 5
Mix together onions, green chillies, salt and coriander powder in another bowl.
Step 6
Heat a non-stick pan and pour a spoon full of the batter.
Step 7
Spread it thin.
Step 8
Spread little onion mix over the dosa and sprinkle 1/4 tsp of oil on it.
Step 9
Gently press the onion mix so that it will stick to the dosa batter.
Step 10
Turn it after sometime.
Step 11
Method 2: 1)Beat the eggs with onions, green chillies, salt and coriander leaves. Set aside.
Step 12
Heat the pan and and pour a spoon full of dosa batter.
Step 13
Spread it thin.
Step 14
Pour 3 - 4 tbsp of the egg mix on the dosa and spread it in the dosa`s shape.
Step 15
Pour a few drops of oil around the dosa.
Step 16
Turn it when the other side gets cooked.
Step 17
Goes well with coconut chutney.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
