Egg Bhurji/scrambled Egg
Egg bhurji is a soft creamy scrambled egg can be ed on their own as a quick meal for a complete break fast and it is also inherently a simple dish.
Ingredientsfor 4 servings
- 5 Egg
- 1/4 tsp Cumin seed
- 3 Onion
- 2 Tomato
- 3 Green chilly
- 1/4 tsp Turmeric powder
- 1/2 tsp Black pepper powder
- Garam masala a pinch
- Salt, to taste
- 2 tbsp Coriander leaves
- Curry leaves, to taste
- 3 tbsp Oil
Preparation
Step 1
In a bowl whisk the eggs and keep it ready.
Step 2
For preparing egg bhurji Heat the oil in a vessel and add cumin seeds then add the chopped onion, green chilly, curry leaves and salt to taste.cook it, stirring for 5 minutes.
Step 3
When the onion gets lightly browned,add tomato and cook for another 3-4 minutes.
Step 4
Add pepper powder,turmeric powder,garam masala to this anf cook until the raw smell disappear.
Step 5
Add the whisked eggs and coriander leaves to this and Fold everything together gently.
Step 6
Now the egg bhurji is ready to serve.serve it hot with chappatis.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
