Egg Baji
Eggs cooked the Kerala way — with a rich masala of shallots, tomatoes, and spices. Fast enough for a weeknight, flavourful enough to feel like effort went in.
Ingredientsfor 2 servings
- Egg 2
- Flour 1 cup
- Green chilly 2
- Red chilly 1 or 2 tsp
- Salt, to taste
- Oil to deep fry
- Turmeric powder 1 tsp
- Soda powder 1 tsp
- Water, to taste
- Coriander leaves 2 tsp
Preparation
Step 1
Boil egg,and cut it to two pieces.
Step 2
Then take a bowl to mix all ingredients.
Step 3
Then mix it using little water.
Step 4
Then put the egg in it.
Step 5
Blend it well.
Step 6
Then heat a pan add put oil to fry in hot oil the egg mix.
Step 7
When both sides get brawn, take it out and wipe off excess oil.
Step 8
Serve while still hot with tomato ketchup.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
