Egg Baffat
Eggs cooked the Kerala way — with a rich masala of shallots, tomatoes, and spices. Fast enough for a weeknight, flavourful enough to feel like effort went in.
Ingredientsfor 1 servings
- 2 nos Eggs
- 50 g Oil
- 2 nos Green chillies
- 5 g Red chillies
- 5 g Coriander powder
- 50 g Onions
- 200 g Tomatoes
- Salt, to taste
- 5 g Baffat powder
Preparation
Step 1
Hard boil the eggs and cut into halfs.
Step 2
Keep them on a serving dish.
Step 3
Set a pan over medium heat and pour in the oil.
Step 4
Add chillies and fry them.
Step 5
Add chopped onions and continue frying.
Step 6
Add tomatoes and continue stirring.
Step 7
Add all masalas and Stir everything together thoroughly.
Step 8
Pour this gravy on the eggs. Serve hot.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
