Egg Ada With Coconut
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 3 servings
- 4 nos Eggs
- 4 Dsp Shallots — minced (Kunjulli)
- 11/2 tsp Ginger — minced
- 1/2 tsp Pepper powder
- 1 cup Coconut — grated
- 2 tsp Curry leaves — minced
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing egg ada with coconut, first beat the egg lightly.
Step 2
Add minced shallots, ginger, pepper powder, grated coconut, curry leaves and required salt to the egg mixture.
Step 3
Heat the oil in a tawa and spread the egg batter. Lower the heat and cover with a lid.
Step 4
When the bottom side of egg ada is fried, turn and fry the other side too.
Step 5
Egg ada with coconut, an apt dish for rice is ready.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
