Easy Vegetable Stew
A mouth watering combination of veggies and thick creamy coconut milk.
Ingredientsfor 3 servings
- 1 cup Vegetables beans, carrot, potato, cauliflower, peas etc
- 1/2 cup Coconut — grated
- 1 nos Onion sliced big
- Cinnamon one inch piece (Karugapatta)
- 2 nos Cloves (Grambu)
- 1 tsp Shallots — sliced (Kunjulli)
- 2 nos Green chillies — slit
- 1/2 tsp Ginger — finely chopped
- Curry leaves, a few
- 1/2 tsp Garam masala
- 1 tsp Black pepper — crushed
- 1 nos Tomato sliced big
- 1 tsp All purpose flour Maida
- Ghee, to taste
- 1 tsp Shallots — sliced (Kunjulli)
- Curry leaves, a few
Preparation
Step 1
For preparing easy vegetable stew, first add half cup water to the grated coconut. Run in a mixer and strain to extract thick coconut milk.
Step 2
Add one cup water and extract thin coconut milk.
Step 3
Pour oil into a pan and heat it and fry cinnamon, cloves, sliced shallots, green chillies, ginger and curry leaves. Fry for a while.
Step 4
When a frying smell comes, add sliced veggies and sauté.
Step 5
Add garam masala and crushed pepper and cook for a few seconds.
Step 6
Now, add thin extraction of coconut milk and required salt.
Step 7
Cover with a lid and cook until the veggies are done. When the veggies are almost done, add tomato slices and simmer in low heat.
Step 8
Add some water to maida flour and make a paste. Add maida to vegetable stew and heat.
Step 9
Now we are entering the final procedure of easy vegetable stew. Add thick extraction of coconut milk. Heat the curry and remove from fire before boiling starts.
Step 10
For seasoning, take a pan and heat ghee. Fry sliced shallots and curry leaves.
Step 11
Easy vegetable stew, an apt creamy dish with appam and chappathi is ready. Serve hot.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
