Easy Tomato Fry
Slow-roasted in coconut oil with a generous hand of spices, this tomato fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.

- 3 nos Tomato — sliced
- 2 nos Green chillies
- 1 tsp Pepper
- 1 tsp Chilly powder
- 2 tbsp Sugar
- Salt, to taste
- 1 tsp Vinegar
- 1 tsp Mustard seeds
- 1 tbsp Red onion
- Coconut oil, to taste
Preparation
Step 1
For preparing easy tomato fry, heat oil, let the mustard seeds crackle and fry onions.
Step 2
Add chilly powder, pepper, sugar and salt. Add tomato and fry.
Step 3
Add vinegar and fry again.
Step 4
Easy tomato fry is ready.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
