Easy Prawn Pickle
A tangy, spicy condiment that keeps for weeks and adds a sharp kick to any Kerala meal. Made with care and stored in a clean jar, this pickle gets better as the days pass and the flavours meld together.
Ingredientsfor 3 servings
- 1/2 cup Prawns cleaned,washed and — drained
- 1/2 tbsp Garlic — crushed
- 1/2 tbsp Ginger — crushed
- 2 tbsp Pickle powder
- 1/2 cup Vinegar
- 1/2 cup Water boiled and cooled
- 1/2 cup Sesame oil Nallenna
- 1/2 tsp Sugar
- 1/2 tsp Mustard seeds
- Curry leaves, a few
- Salt, to taste
Preparation
Step 1
For preparing easy prawn pickle, first heat sesame oil in a pan.
Step 2
Mix some salt with the drained prawns and fry in the boiling sesame oil until golden in color. Do not fry too much to avoid hardness.
Step 3
Remove the fried prawns from oil and set aside.
Step 4
In the remaining sesame oil, crackle mustard seeds.
Step 5
Add crushed ginger, garlic, curry leaves and cook for a while.
Step 6
Add pickle powder, vinegar, water and heat. Stir everything together thoroughly and add fried prawns, sugar and required salt. Stir and remove the vessel from fire.
Step 7
Easy prawn pickle, a Mouth watering pickle, is ready. Cool and store in glass bottle.
Tip
The jar must be completely dry and the spoon must be clean every time you take from it. Any moisture introduces bacteria and spoils the pickle.
