Easy Pepper Chicken
A robust chicken preparation where the meat absorbs a pounding of Kerala spices and slow-cooked onions. The curry leaves and coconut oil make it unmistakably from this part of the world.
Ingredientsfor 4 servings
- 1 kg Chicken skinned and — cut into pieces
- 11/2 " Ginger — sliced
- 10 nos Garlic pods peeled and — sliced
- 2 cup Yoghurt/Curd
- 1/4 tsp Turmeric powder
- 3/4 tsp Garam masala powder
- 1 tsp Pepper powder
- Salt, to taste
- Oil
Preparation
Step 1
Place the chicken in a large bowl.
Step 2
Add yoghurt, turmeric, garam masala, pepper powder and salt.
Step 3
Stir everything together thoroughly together and set aside for about 30 minutes.
Step 4
Set a pan over medium heat and pour in the oil or a kadai.
Step 5
Cook ginger and garlic, till brown.
Step 6
Add the marinated chicken.
Step 7
Close with a lid and cook, till the chicken is almost done.
Step 8
Remove the lid and allow the water to get absorbed.
Step 9
Take it off the heat., when the chicken is cooked and there is enough gravy to coat the chicken.
Step 10
This dish is not a gravy dish. You can alter the amount of pepper and garam masala according to your taste.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
