Easy Payasam-Kheer
A festive Kerala payasam that demands patience and rewards it generously. Milk is simmered for the better part of an hour, thickened with care, sweetened with jaggery or sugar, and served with a prayer that there are leftovers.
Ingredientsfor 5 servings
- 1 glass Cooked rice
- 1/2 glass Cooked dal Cherupayarparippu
- 3 nos Cardamom — powdered (Elakka)
- Coconut milk from half a coconut
- 1 tbsp Ghee
- Sugar, to taste
Preparation
Step 1
Put cooked rice and cooked dal in a vessel.
Step 2
Add 1 1/2 glass of water and cook for about 15 minutes.
Step 3
Add sugar and powdered cardamom.
Step 4
Add the coconut milk.
Step 5
Add ghee and heat for about 7 minutes.
Step 6
Serve while still hot or chilled.
Tip
Keep stirring throughout — the cream that forms on the sides should be scraped back in. That is where the richness comes from.
