Easy Mushroom-Khombi Dry Stir With Egg
Mushroom pieces cooked with ginger, garlic and other ingredients.
Ingredientsfor 3 servings
- 100 g Mushrooms — cut into quarters
- 3 nos Garlic cloves — finely chopped
- Ginger — finely chopped
- Red chilly powder A pinch
- Cumin seeds A pinch (Jeerakam)
- 1/2 tbsp Oil
- Salt, to taste
- 2 nos Egg
Preparation
Step 1
First Heat the oil in a pan and allow to crackle cumin seeds.
Step 2
Add chopped ginger and garlic. cook well for a few seconds.
Step 3
Stir in mushroom pieces, red chilly powder and salt.
Step 4
Cook in high heat for 2 minutes.
Step 5
Lower the heat and cook until mushrooms are done. Switch off the gas when water content fully evaporates.Beat egg in a bowl and fry well.
Step 6
Immediately, transfer mushrooms to a serving bowl. Make sure that mushrooms are not overcooked.
Step 7
You can serve easy mushroom/khombi dry stir as a healthy snack or even as an accompaniment with egg omelet.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
