Easy Mix Vegetable Soup
A light, warming broth seasoned with black pepper and curry leaves. This is not the kind of soup that tries to be a meal — it is the kind that settles the stomach, clears the head, and warms you from the inside.
Ingredientsfor 4 servings
- 1 nos Carrot — chopped
- 1 nos Beetroot small — chopped
- 2 nos Tomato — chopped
- 1 nos Drumstick — sliced
- 10-15 nos Fresh green peas
- 1 tbsp Toor dal Tuvara parippu
- 10 nos Pudina leaves
- 3 Stalks coriander leaves
- 50 g Butter
- 6 cup Water
- Salt, to taste
Preparation
Step 1
Cut the vegetables into pieces of medium size. 2)In a pressure cooker, add butter and fry dal and vegetables. cook it, stirring for one minute. Now add the pudina and coriander leaves. Add water and salt and let it go for 5 to 6 whistles.
Step 2
Once the pressure from the cooker is gone, open it and cool it for some time.
Step 3
Grind all the mix in a mixie and sieve the mix and heat it for a while and use it. Delicious thick vegetable soup is ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
