Easy Kerala Aviyal
It is a kerala dish we can see in onam and marriage sadyas.It is an inevitable part of kerala sadya.It is a healthy recipe.
Ingredientsfor 4 servings
- 2 nos Carrot
- 2 nos Brinjal
- 1 nos Snake guard
- 1/4k g Elephant foot
- 1 cup Coconut — grated
- 1 tsp Cumin seeds
- 1 nos Onion
- 4 nos Green chilly
- 1/2 cup Water
Preparation
Step 1
Cook vegetables with 1/2 cup water,green chilly,turmeric powder and salt.
Step 2
Add curry leaves to this and boil for a minute.
Step 3
In a mixer grind coconut,cumin seeds,onion and chilli powder.
Step 4
Add this ground mix to vegetables add little salt and tamarind paste and let it bubble for 4 minutes in a low flame.
Step 5
Pour some coconut oil on the top mix all together gently. Now Easy Kerala aviyal is ready to serve.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
