Easy Egg Curry
This homestyle egg curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 4 servings
- 5 nos Egg boiled
- 2 nos Onion
- 3 nos Tomato — chopped
- 1 piece Ginger
- 4 Cloves Garlic
- 4 nos Green chillies
- 2 cup Coconut milk
- 1 tsp Garam masala
- 1 tbsp Corianer powder
- 2 tsp Chilly powder
- 1 tsp Turmeric powder
- Salt, to taste
- 1 tsp Mustard
- Oil, to taste
Preparation
Step 1
For preparing easy egg curry, add onion, ginger, garlic, green chillies, garam masala, chilly, turmeric, coriander in blender.
Step 2
Slightly crush it.
Step 3
Heat the oil in pan. let the mustard seeds crackle and add tomato. When it has softened, add the masala and fry well.
Step 4
Add coconut milk and salt. Boil and thicken it.
Step 5
Add egg pieces and Stir everything together thoroughly.
Step 6
Easy egg curry is ready.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
