Easy Cow¦s Brain Dry Fry
Slow-roasted in coconut oil with a generous hand of spices, this mixed fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.

- 1 nos Cow’s brain — cleaned
- 1 nos Onion — finely cubed
- 1/2 tsp Pepper powder
- Turmeric powder A pnch
- 2 Springs Curry leaves
- Ghee, to taste
- Salt, to taste
Preparation
Step 1
For preparing easy cow¦s brain dry fry, heat ghee in a vessel till it becomes transparent.
Step 2
Drop in the brain, curry leaves, pepper powder, turmeric powder and salt. Allow it to cook on low heat with a lid.
Step 3
Easy cow¦s brain dry fry is ready. Serve hot as a side dish with rice.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
