Easy Chicken Roast
Quick recipe for bachelors and working mothers - Easy Chicken Roast.
Ingredientsfor 4 servings
- 1 kg Chicken medium sized pieces
- 3 nos Onions — finely sliced
- 1 nos Tomato chopped, big
- 3 nos Green chilies — slit
- 1 tsp Ginger paste
- 1 tsp Garlic paste
- 11/4 tbsp Chilly powder
- 11/4 tbsp Coriander powder
- 1 tsp Pepper powder
- 1 tbsp Chicken masala Eastern Chicken Masala preferred
- 1/2 tsp Garam masala
- 1/2 tsp Fennel powder (Perumjeerakam)
- 1/2 tsp Turmeric powder
- 1 sprig Curry leaves
- Salt, to taste
Preparation
Step 1
In a cooker, take the washed and drained chicken pieces, 1/2 tsp pepper powder, required salt, 1/4 tsp turmeric powder, 1/2 tsp ginger and garlic paste. Add 1/2 tsp fennel powder. Close the cooker and cook till 2-3 whistles. Remove the vessel from fire and set aside. Do not open till pressure has been released completely.
Step 2
In another pan, heat oil and sautT onions well. Once onions are sauted, add 1/2 tsp ginger paste, 1/2 tsp garlic paste, green chillies and curry leaves. cook well.
Step 3
Next add 1 1/4 tbsp chilly powder, 1 1/4 tbsp coriander powder, 1/2 tsp pepper powder, 1/4 tsp turmeric powder, 1 tbsp chicken masala and 1/2 tsp garam masala powder. cook well.
Step 4
Add tomato and sautT till completely blended. When the masala turns brown, add cooked chicken from the cooker. Stir everything together thoroughly and add salt if required.
Step 5
Cover the pan and cook in low flame for 10 minutes, stirring in between to avoid burning.
Step 6
After 10 minutes of cooking, if you see traces of water, remove the lid and cook in medium flame till the curry reaches an almost dried up consistency.
Step 7
Goes well with love.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
