Easy Chicken Mushrooms
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 2 servings
- 250 g Mushroom
- 300 g Chicken
- 3 nos Green chillies
- 2 - Garlic pods
- 11/2 nos Onion
- 1" piece Ginger
- 1/2 tsp Pepper powder
- 1/2 tsp Garam masala
- 1/4 tsp Turmeric powder
- Salt, to taste
- 2 tbsp Vegetable oil
Preparation
Step 1
Pressure cook chicken with little turmeric powder and salt.
Step 2
Remove the bones from chicken and cut chicken into small pieces and set aside.
Step 3
Set a pan over medium heat and pour in the oil.
Step 4
Fry cut green chillies, ginger, garlic and onion.
Step 5
Add garam masala, pepper powder and turmeric powder and sauté, till the raw smell goes.
Step 6
Add washed and cut mushrooms and mix it well with rest of the ingredients in the pan.
Step 7
Add salt and mix again.
Step 8
Put the lid on and cook for about 10 minutes.
Step 9
Add pieces of chicken and mix them again.
Step 10
Cook for another 6 - 8 minutes, stirring frequently without any lid on the pan.
Step 11
Goes well with hot rice.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
