Easy Chicken Curry Easy
This homestyle chicken curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 5 servings
- 1/2 kg Chicken
- 2 Onion
- 1 Tomato
- 1/2 cup Yogurt
- 1 Bay leaves
- 2 Cardamom
- 2 Cloves
- 1 tsp Ginger paste
- 1 tsp Garlic paste
- 1 tsp Red chilly powder
- Cumin seeds a pinch
- Salt, to taste
- Coriander leaves
- Oil, to taste
Preparation
Step 1
Cook onion in oil and grind it to make a fine paste.
Step 2
Puree the tomato.
Step 3
Set a pan over medium heat and pour in the oil and sautT ginger-garlic paste, cardamom, cloves and bay leaves in it.
Step 4
Mix in the remaining ingredients and onion paste and tomato puree.
Step 5
Stir everything together thoroughly.
Step 6
Pour water, coriander leaves and cook it well. Serve it.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
