Easy Brinjal Fry
Round brinjal slices coated with chilly masala and shallow fried.
Ingredientsfor 3 servings
- 200 g Brinjal Vazhuthananga
- 1 tsp Chilly powder
- 1 tsp Pepper powder
- 1 tsp All purpose flour Maida
- 1 Dsp Garlic
- 1 Dsp Shallots (Kunjulli)
- 1 Dsp Vinegar
- Salt, to taste
- Oil — for frying
Preparation
Step 1
Slice the brinjal into thick rounds and leave in salted water for a few minutes. Drain and dry the brinjal.
Step 2
Grind the ingredients: chilly powder, pepper, garlic and shallots in vinegar. Mix the masala paste in flour.
Step 3
Rub the masala paste on both sides of the brinjal slices and marinate for 10 minutes.
Step 4
Place a pan on the stove and pour sufficient oil for frying. Heat the oil and pan-fry both sides of the brinjal till golden in color and crisp.
Step 5
Easy brinjal fry, a nutritional recipe, is ready.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
