Easy Ada Pradhaman
A festive Kerala payasam that demands patience and rewards it generously. Milk is simmered for the better part of an hour, thickened with care, sweetened with jaggery or sugar, and served with a prayer that there are leftovers.
Ingredientsfor 4 servings
- 1 Packet Ada
- 11/2 litre Milk
- 1 cup Sugar or
- Salt A pinch
- 1/2 tsp Cardamom powder (Elakka)
- 10 nos Cashew nuts
- 15 nos Raisins Unakka munthiri
- Condensed milk A small can
- 1 tsp Ghee
Preparation
Step 1
Wash ada with cold water.
Step 2
Boil milk in a vessel and add ada. Let it cook, then add more milk, sugar, a pinch of salt and cardamom powder.
Step 3
Add condensed milk and let it boil.
Step 4
Heat ghee in a kadai and fry cashew nuts and raisins. Add this to the payasam.
Step 5
Ada pradhaman is ready.
Tip
Keep stirring throughout — the cream that forms on the sides should be scraped back in. That is where the richness comes from.
