Duck Roast Easy
A proper Kerala fry — duck tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 4 servings
- 1 nos Duck medium sized
- 1 tsp Coriander powder
- 1 tsp Pepper powder
- 1 tsp Turmeric powder
- 1 tsp Chilli powder
- 2 nos Cloves (Grambu)
- 2 nos Cinnamon (Karugapatta)
- 1 cup Oil
- 1 nos Onion — chopped
- 2 nos Potato — sliced
- 3 nos Onions sliced — for frying
- Salt, to taste
Preparation
Step 1
Clean the duck and cut it into about 6 to 8 big pieces.
Step 2
Cook it with all the spices, chopped onions and salt.
Step 3
When done, remove the pieces reserving the gravy.
Step 4
Heat the oil in a big frying pan and fry sliced onion and potatoes separately.
Step 5
Remove from oil.
Step 6
Next add the pieces of duck and fry well.
Step 7
Remove the pieces and add the reserved gravy to the pan.
Step 8
When it simmers, add the fried duck. Stir everything together thoroughly.
Step 9
Get it off the fire.
Step 10
To serve, place the duck in a serving dish and garnish with fried potatoes and onions.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
