Drumstick Leaves (Muringayila) Thoran
the most favorite and very popular side dish in Kerala Cuisine. This is a quick stir fry of the drumstick leaves tossed with grated coconut. The fresh coconut used here will enhance the taste and reduces the bitter taste too.
Ingredientsfor 3 servings
- 200 g Drumstick leaves Approx (Muringayila)
- ½ cup Coconut — grated
- 1 tsp Raw Rice
- 5 nos Green Chilli — sliced
- ½ cup Shallots Onion — sliced
- Salt, to taste
- 3 tsp Coconut/Refined Oil
Preparation
Step 1
For preparing the delicious Thoran, first heat 2 – 3 Tsp of Oil in a Cheenachatty. Add the Rice into the hot oil and stir it.
Step 2
Add Shallots/Onion slices, Green Chilli slices and stir the mixture for few minutes in low flame until the onions are slightly browned and translucent.
Step 3
When colour of this mix turns into golden/brown, add grated coconut also and stir the Stir everything together thoroughly.
Step 4
Next, add the Drumstick leaves (Muringayila) into the mix along with required quantity of salt. Stir the Stir everything together thoroughly and allow to cook the Drumstick leaves properly by covering with a lid. No water should be used for making this Thoran, if water is added, then it will give a bitter taste for Thoran. It will take about 5 – 10 minutes to cook the Thoran properly.
Step 5
After about 5 – 10 minutes, stir the Thoran again and change it into a serving plate. The delicious thoran dish goes well with rice for noon day meals.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
