Dried Prawns Masala
Fresh prawn cooked the Kerala way — with coconut, curry leaves, and a tartness that comes from kudampuli or tamarind. Coastal Kerala cooking at its simplest and best.
Ingredientsfor 3 servings
- 250 g Dried prawns
- Ginger — minced
- 1 nos Onion — chopped
- 1 nos Tomato — chopped
- 2 tsp Chilly powder
- 1 tsp Turmeric powder
- Curry leaves, a few
- Coriander leaves, a few
- Garam masala A pinch
- Salt, to taste
- Coconut oil, to taste
Preparation
Step 1
For preparing dried prawns masala, first remove legs and head of dried prawns and clean well.
Step 2
Drain water and keep it in a tissue.
Step 3
Heat oil, add onion, curry leaves and ginger-garlic.
Step 4
Fry till golden. Add garam masala and tomato. Fry for a while.
Step 5
Add salt, chilly powder, turmeric and fry again.
Step 6
Add prawns and cook well. Add water if required.
Step 7
Sprinkle coriander leaves on top and serve. Dried prawns masala is ready.
Tip
Seafood cooks in minutes. The single biggest mistake is overcooking — the moment fish turns opaque or prawns curl and go pink, they are done.
