Diamond Cuts - Crispy
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 5 servings
- 2 cup All Purpose flour Maida
- 1/2 Of Egg
- Water around 1/4 to 1/2 cup to make a smooth dough
- 2 Pinches Salt
- 1/4 tsp Cardamom powder — optional
- Oil for deep frying
- 1 cup Sugar
- 4 tsp Water
Preparation
Step 1
Mix flour, egg, salt and cardamom powder long with enough water to make a smooth dough.Knead very well to incorporate all the ingredients.
Step 2
Cover the dough with a damp cloth and leave in the kitchen counter for around 15-30 mts.
Step 3
Dust the kitchen counter with enough flour.
Step 4
Divide the dough into equal parts and start working on one ball at a time, meanwhile leaving the other balls under the cloth.
Step 5
Flatten the dough ball into a rectangle shape using a rolling pin and cut out equal strands of ribbons.
Step 6
Now make slanted cuts in one ribbon voila you got diamond shaped cuts.
Step 7
Repeat the steps for rest of the leftover dough balls.
Step 8
Heat a wok with enough oil and fry the cuts out (few at a time).
Step 9
The cuts will puff up and ends will start browning up. :- This is the perfect cooking for the cuts.
Step 10
Drain them in kitchen towel and set aside.
Step 11
Mix water and sugar on a stove top and you get a threadlike consistency.
Step 12
Coat the diamond cuts with the sugar syrup and keep them aside for cooling down. :- You can dip diamond cuts in the syrup and drain them using a slotted spoon. 13)Once the cuts are cooled, store them in an airtight container.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
