Diabetic Idly
Different types of grains are soaked and ground to a fine paste.
Ingredientsfor 4 servings
- 1/2 cup Ragi
- 1/2 cup Wheat
- 1/2 cup Split black gram Parippu (Uzhunnu)
- 1/2 cup Green Gram Cheru payar
- 1/2 cup Yellow lentils Thuvara Parippu
- 3 nos Red chillies
- 2 nos Green chillies
- 1 Spring Curry leaves
- 1/2 tsp Asafoetida powder Kaayam
- Salt, to taste
Preparation
Step 1
For preparing diabetic idly, immerse the grains in water for about 3 hours and make a coarse batter adding chillies, salt and asafoetida.
Step 2
Ferment for about 3-4 hours, add curry leaves and make idly¦s.
Step 3
Diabetic idly¦s are ready.
Step 4
Note: 1)Keep the remaining batter in the refrigerator after 3-4 hours to avoid more fermentation.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
