Delicious Beef Fry
Slow-roasted in coconut oil with a generous hand of spices, this beef fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 4 servings
- 1/2 kg Beef
- 2 nos Onion — sliced
- 2 nos Green chillies — minced
- 1 piece Ginger — crushed
- 4 Cloves Garlic — crushed
- 1/4 tsp Turmeric powder
- 11/2 tsp Chilly powder
- 1/2 tsp Coriander powder
- 1 tsp Meat Masala — optional
- Fennel seeds powder A pinch (Perumjeerakam)
- 1 nos Cinnamon stick (Karugapatta)
- 3 nos Cloves (Grambu)
- 1 nos Star aniseed (Thakkolam)
- 2 nos Cardamom (Elakka)
- Black pepper, a few
- Curry leaves, a few
- Salt, to taste
- 2 nos Dry red chillies
- 1 tsp Mustard seeds
- 10 nos Shallots
- Oil, to taste
Preparation
Step 1
Roast fennel, cinnamon, cloves, star aniseed, cardamom and black pepper till the aroma comes. Make it a powder.
Step 2
Marinate beef with all the ingredients and the powders except oil, shallots, mustard seeds and red chillies for 30 minutes.
Step 3
Cook it with enough water in a pressure cooker until all the water gets evaporated.
Step 4
Heat the oil in another pan and let the mustard seeds crackle, dry red chillies and shallots. cook well until shallots become golden brown.
Step 5
Add cooked beef to the pan and give it a good stir till beef gets dark colour.
Step 6
Delicious beef fry is ready. Serve hot.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
