Dates Pickle With Carrot
A tangy, spicy condiment that keeps for weeks and adds a sharp kick to any Kerala meal. Made with care and stored in a clean jar, this pickle gets better as the days pass and the flavours meld together.
Ingredientsfor 4 servings
- 250 g Dates seeds removed
- 250 g Carrot sliced into small pieces
- 30 g Or Dry red chillies
- 1 tsp Sugar
- 11/2 cup Vinegar
- Salt, to taste
Preparation
Step 1
For preparing dates pickle with carrot, first grind together dates and dry red chillies with vinegar to a smooth paste.
Step 2
Get a clean and dry glass bottle. Put the thinly sliced carrot pieces first.
Step 3
Add ground dates vinegar mix.
Step 4
Add sugar, required salt and Stir everything together thoroughly.
Step 5
Close the bottle with a tight lid and set aside for two days.
Step 6
Dates pickle with carrot, an oil free mouthwatering recipe is ready.
Tip
The jar must be completely dry and the spoon must be clean every time you take from it. Any moisture introduces bacteria and spoils the pickle.
