Dates Lemon Pickle
Sun-soaked and fiery — this mixed pickle is the small jar that sits on every Kerala dining table and makes plain rice taste complete. A little goes a long way.
Ingredientsfor 15 servings
- 500 g Dates
- 5 nos Lemon
- Ginger Small piece(Chopped
- 2 Pods Garlic — chopped
- 4 nos Green chilly — chopped
- Vinegar, to taste
- 2 tbsp Pickle powder
- 1 tbsp Chilly powder
- Curry leaves little
- 2 tbsp Oil
- Salt, to taste
Preparation
Step 1
Remove the seeds and chop the dates.
Step 2
Wash the lemon properly and cut into small pieces.
Step 3
Warm the oil in a pan and cook chopped ginger, garlic and green chilly for 2 minutes.
Step 4
Add chopped dates and Stir everything together thoroughly.
Step 5
Add chilly powder, pickle powder, curry leaves and salt. Stir everything together thoroughly.
Step 6
Stir in chopped lime pieces. Stir everything together thoroughly with a spoon for a few minutes and take it off the heat. Add vinegar as needed. Remove the prepared pickle into a clean dry glass jar with lid. Keep the jar covered with lid for one week. Then the pickle is ready.
Step 7
Dates Lemon Pickle is ready.
Tip
Mustard oil needs to be heated to smoking point and then cooled before adding to the pickle. This removes its pungent raw flavour.
