Dalitoy
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- Tuvar dal : 1 cup
- 4 nos Green chillies slit : 3
- Mustard seeds : ½ tsp
- Whole cumin seeds : ½ tsp
- Turmeric powder : ½ tsp
- Ginger finely chopped : ½” pc
- Curry leaves : 2 tsp
- Ghee : 1 spring
- Asafoetida : a pinch
- Coriander leaves : 2 tsp — chopped
- Salt, to taste
Preparation
Step 1
Wash the toor dal well and pressure cookwith sufficient water for 4-5 whistles.
Step 2
Remove the dal from the pressurecooker and churn using a wooden ravi or a hand blender. Add a little water toadjust the consistency.
Step 3
Heat the ghee in a deep bottompan and add the mustard. When it allow to crackles, add whole jeera, hing, curry leaves,slit green chillies.
Step 4
Add the boiled dal to thetempered ghee and add finely chopped ginger, turmeric powder, salt and 1 -1 ½ cupwater.(add water according to the consistency of the dal required).
Step 5
Bring the dal to a boil.
Step 6
Garnish with coriander and serve withrice.
Tip
