Dal Paalak
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 1/2 cup Red gram (Thuvaraparippu)
- 1 cup Spinach/Paalak — chopped
- 1 nos Onion
- 1 nos Tomato
- 1 nos Slit chilly
- 1 tsp Garlic Ginger Paste
- Salt, to taste
- 1 tsp Sugar
- Coriander leaves — for garnishing
- For Seasoning
- 1/2 tsp Mustard seeds
- 1 tsp Cumin Seeds (Jeerakam)
- 1/4 tsp Fenugreek seeds (Uluva)
- 1/2 tsp Turmeric powder
- 2 tbsp Oil
Preparation
Step 1
Cut paalak and cook nicely with enough water.
Step 2
Cook dal in a pressure cooker.
Step 3
Cut tomato and onions finely.
Step 4
Set a pan over medium heat and pour in the oil.
Step 5
Add all the seasoning ingredients. When it allow to crackles, add onions and chilli. Fry till onions become translucent.
Step 6
Add garlic-ginger paste and fry for another minute.
Step 7
Add finely chopped tomatoes. Give it a stir now and then, until done.
Step 8
When it is done, add cooked dal and paalak.
Step 9
Pour 1/2 cup of water, salt and sugar and Bring to a gentle boil.
Step 10
Garnish with coriander leaves.
Tip
Grinding spices fresh makes a noticeable difference. Pre-ground powders lose their punch within weeks. Buy whole, toast lightly, and grind as you need.
