Cucumber-Vellarika Kaalan
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 1/2 kg Cucumber — chopped
- 1 tsp Chilly powder
- 1/2 tsp Turmeric powder
- 5 nos Green chillies split
- Curry leaves, a few
- Water, to taste
- 2 cup Curd beaten
- Salt, to taste
- 2 tbsp Coconut
- 1/2 tsp Mustard seeds
- 1/2 tsp Fenugreek seeds (Uluva)
- 2 nos Dry red chillies — cut into 2 pieces
Preparation
Step 1
For preparing vellarika kaalan, first take a vessel and boil water. Add turmeric powder, chilly powder, green chillies, curry leaves and cucumber.
Step 2
Take it off the heat. when the cucumber pieces are done and allow it to cool.
Step 3
Add curd and salt to it.
Step 4
Heat this mixture again and add little water. Stir continuously, do not boil.
Step 5
Pour oil into a pan and heat it, let the mustard seeds crackle, red chillies and fenugreek seeds.
Step 6
Add this to the curry and take it off the heat. Serve hot with rice.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
